DEEP FOOD

Hiroshima’s food culture,
nurtured by history.

Hiroshima’s food culture is a testament to the revival of a city that has been nurtured by its history.
From the delicious taste of okonomiyaki, which is layered with a variety of ingredients, to the exquisite oysters cultivated in the waters of Miyajima, as well as sake from Saijo, one of the three most famous sake brewing districts in Japan, Hiroshima offers a unique culinary experience.
A culinary journey in Hiroshima will not only satisfy your hunger, but also give you a taste of a region that has risen gracefully from its past.

Hiroshima okonomiyaki

Hiroshima okonomiyaki is one of the most well-known dishes in Hiroshima.
There are other similar dishes such as Kansai-style okonomiyaki and monjayaki (Tokyo) in which vegetables and pork are mixed into batter made of melted flour and then pan-fried (usually cooked over a teppan or iron griddle), but Hiroshima okonomiyaki is made in a way unique to Hiroshima.
First, flour is dissolved in water to make batter, then the batter is rolled out into a thin, circular shape on a large teppan and cooked. Next, it is topped with plenty of vegetables such as cabbage, bean sprouts, and green onions, which will help to steam and bake the ingredients over the griddle. After that, yakisoba noodles are layered from above and the dish is further cooked, then it is finished off by spreading okonomiyaki sauce and sprinkling aonori (green dried seaweed) on top. If you enter the restaurant and sit in front of the teppan, you can watch the actual cooking process in action.

Sake

The area around Saijo Station in Higashihiroshima City is home to seven sake breweries and is known as “Saijo, the Sake Capital.” Saijo sake was served to the heads of state at the G7 Hiroshima Summit.
Saijo’s development as the sake capital led to the creation of brewing techniques using soft water, which was once considered unsuitable for sake brewing, and the town has now become one of the leading sake brewing regions in Japan. In traditional white-walled breweries, premium sake such as daiginjo is still being produced, and the soft aroma of sake can be enjoyed as it permeates the streets during the sake brewing season. Further, there are old sake breweries that have been refurbished into cafes and restaurants, as well as establishments that serve sake in addition to sweets and dishes made from sake brewing water, making the area a place where sake can be enjoyed from every possible angle.
